Dunkin’ Donuts CML Bakery Begins Production

With their recently completed Central Manufacturing Location (CML) Bakery, Purple Square Management is now producing and distributing donuts and other baked goods to Dunkin’ Donuts restaurants throughout the Tampa Bay area.  The 22,900 SF CML Bakery allows the individual restaurants to improve their overall efficiency while still providing a quality product.

The main component of the CML Bakery is the production area, which contains production lines and equipment for mixing, proofing, frying, glazing, and finishing baked goods.  Cleanliness is a top priority for the CML bakery, so the production area was constructed to accommodate wash down requirements with stainless steel wall panels, frp wall panels, epoxy flooring, trench drains, floor drains, and NEMA 4x electrical components.  Other features associated with the production area include multiple exhaust hoods totaling 15,500 CFM, a 1,500 gallon grease interceptor, and a 500 kVA generator.  The facility also contains supporting areas for product staging, sterilization, shipping, and offices.
